W    WEST AFRICA – West African Groundnut Stew.  I used the recipe found here.  It was really delicious!  Sweet potatoes, spinach and tomatoes in a peanut sauce.  A very forgiving recipe that can be cooked on the stove or in a crock pot just as easily.  Groundnuts are peanuts, but groundnuts sounds so exotic!  A creamy, orangey-yellow sauce with a very mild kick from a Serrano pepper.  I served it over brown rice, with baked tofu.  An entirely delicious meal, one worth having again.
